Umami: the flavor of protein.

Researchers seem to have decided that there is a fifth taste, which is keyed to the free amino acid glutamate. It is found in asparagus, tomatoes, cheese, meat, and (this article doesn't mention) mushrooms.

I read this and thought, aha. This might explain why vegetarians are so into mushrooms.
